Basic Muffins

Another recipe I found and tweaked. I love how versatile these are and so easy to double the recipe. I am particularly fond of muffins.

Basic Muffins

1/2 cup Gluten Free Whole Grain Mix*

1/2 cup brown rice flour

1/4 teaspoon xanthan gum

1/4 teaspoon salt

1 1/2 teaspoons baking powder

1 teaspoon brown sugar

1 teaspoon white sugar

2 large eggs

2 tablespoons canola oil (Spectrum or SmartBalance)

1/2 cups milk

1 teaspoon vanilla extract (optional, but a really good addition)

Heat oven to 375 degrees F and grease 8 muffin cups. Whisk flours, xanthan gum, salt, baking powder, and both sugars in a medium bowl; set aside. Beat eggs until frothy, whisk in oil, milk, and vanilla. Pour into dry ingredients and stir with a spoon until well blended. At this time add your blueberries, or chopped apple pieces, or chocolate chips, or whatever else you like in your favorite muffins. Spoon into muffin tin and bake 20 minutes, or until lightly browned.
